PROSPERITY ROSELLE CUPCAKE

How to bring Prosperity this CNY? Make these Prosperity Roselle Cupcakes - YUM!


 
Further to our earlier Blog on Chinese New Year and promising you some new CNY Recipes - here's the first with our Roselle Powder and in collaboration with AYAM using the company's either coconut milk or coconut cream for today's recipe and a few others that we are going to share.

Ayam Brand known also as Ayam is a multi-national food company, specialising in prepared foods, including seafood, canned fish (sardines as they started referring to the canned sardines or salmon as « Ayam Brand » (Ayam being the Malay word for Chicken or rooster)

Here's what you need to grab some prosperity in the Year of the Pig, the last animal in this zodiac cycle.

INGREDIENTS :-

* 1.5 cups SR Flour

* 1 cup caster sugar

* 1 cup water

* 1/3 cup veg oil

* 1 tsp vanilla essence

* 1 tablespoon lemon juice or white vinegar

* 1 tablespoon My Blue Tea Blue - Roselle Powder

VANILLA FROSTING :

*1 cup vegan butter

* 2.5 cup icing sugar

* 2 tsp Ayam Coconut Cream / Ayam Coconut Milk

* 1 tsp vanilla essence.

* 1 tablespoon My Blue Tea Blue - Roselle Powder

"Gong Xi Fa Chai Xin Nian Kuai Ler" is Happy Chinese New Year and wishing you Health, Wealth & Longevity.

METHOD :

1. Preheat oven to 180 degrees.

2. Mix all dry ingredients together.

3. Mix Roselle powder into water.

4. Add oil, vanilla and lemon/vinegar into dry ingredients

5. Add roselle liquid and mix well.

6. Pour mixture into cupcake cases and bake for 20-25 minutes.

7. Decorate or draw with any Chinese New Year motives or CNY Red Packets

8. Enjoy

Prosperity Roselle Cupcakes

FROSTING METHOD :

1. Mix Roselle Powder with coconut milk.

2. Beat butter, icing sugar and vanilla until well mixed.

3. Beat in Roselle Coconut milk mixture until fluffy

PRO-TIPS

Purple Sweet Potato – Substitute Roselle Powder with 2 TBS My Blue Tea Purple Sweet Potato powder . Or you could try a Blue Pancake - instead of Pandan Powder replaced it with our Blue Butterfly Pea powder and mixed them. Use about half-a-teaspoon and dissolved it in hot water (2 teaspoon hot water).
