How to brew Butterfly Pea Lemon Barley using Blue

Butterfly Pea Powder ?

When the weather's cold, a big pot of soup simmering on the stove warms the heart as well as the hearth. Adding some whole grain barley to the pot will improve your health along with the flavour of whatever soup or stew you're cooking. In addition to its robust flavour, barley's claim to nutritional fame is based on its being a very good source of molybdenum, manganese, dietary fibre, and selenium, and a good source of copper, vitamin B1, chromium, phosphorus, magnesium, and niacin. In addition, barley's dietary fibre is high in beta glucan, which helps to lower cholesterol by binding to bile acids and removing them from the body via the faeces. The fibre in barley can also help to prevent blood sugar levels from rising too high in people with diabetes.

Here’s the recipe :-

INGREDIENTS


 
* 1/3 cup (65g) pearl barley
 

 
* ½ - 1 teaspoon Blue Butterfly Powder (or to your desired colour)
 
* Finely grated rind and juice of 2 lemons
 

 
* 1/2 cup (110g) caster sugar or honey

* Ice

## If you are using Butterfly Pea flower you would need to boil say around 10-15 petals with

the barley to grab the colour. To grab its health benefits best to use Blue Butterfly Pea Powder

as you just stir in the powder when it has cool.

METHOD


 
• Step 1
 

 
Place barley in a sieve. Rinse under running water until water runs clear then place in a saucepan with lemon rind and 6 cups of water. Bring to the boil over medium heat. Simmer for 10 minutes then strain mixture into a heatproof bowl, discarding barley. When tepid – add Blue Butterfly Pea Powder - stir until dissolved and let liquid cool.

• Step 2
 

 
Add sugar to bowl. Stir until dissolved then stir in lemon juice.
 

 
Pour into bottles and refrigerate until chilled.


 
Garnish with some mint leaves for that tropical taste.

If you wish to see colour changing drink - add more lemons and it will change from Blue to Pink to Purple. Go ahead and experience it.
