Instructions
Make the Pandan Syrup (can be done ahead):
In a small saucepan, combine the water, sugar, and Pandan Powder.
Bring to a simmer over medium heat, stirring until the sugar dissolves.
Let it simmer for 5-7 minutes to infuse. Remove from heat and let it cool completely. Sieve the Pandan powder residue. (This makes more than one drink; store the extra syrup in the fridge for up to 2 weeks).
Tip: Just use 1 tspn of Pandan Liquid
Build the Mojito:
In a tall glass, add the mint leaves and lime wedges.
Using a muddler or the back of a spoon, gently press (muddle) them to release the mint oils and lime juice. Be gentle—you don't want to shred the mint leaves, as it can make the drink bitter.
Mix the Drink:
Add the fresh orange juice, lime juice, pandan syrup, and white rum to the glass.
Stir well to combine all the ingredients.
Finish and Serve:
Fill the glass to the top with ice cubes.
Top up with soda water for a refreshing fizz.
Gently stir once more to mix everything.
Garnish with an orange slice, a fresh sprig of mint, and a pandan leaf. Serve immediately.
