Let us share something from Jackie — a mom, an entrepreneur, and a true foodie at heart. This recipe had been tugged away somewhere, hidden in a forgotten folder for months. Life got busy. Work + family needed attention. Work demanded focus. But then, one afternoon, we stumbled upon it again. "There are days where I wish I could be satisfied by eating a super food smoothie bowl for lunch. But I am a foodie and love a balanced diet, even though some days are dessert days!

I’ve been interested in creating a sweet treat using dragon fruit and when I was gifted some Roselle powder from @my.blue.tea I knew I needed to make this Roselle Custard tart with Dragon fruit jelly. The taste of roselle is a tangy almost cherry like flavour, paired with dragon fruit and it’s a texture packed treat with lots of iron!"

What you need:

Roselle Custard Tart with Dragonfruit Jelly

For the custard

Ingredients:

*100ml pouring cream

*100ml of milk

*3 egg yolks

*3 tbsp of caster sugar

*1 tbsp cornflour

*3 tbsp of plain flour

*1 tsp of vanilla essence

For the pastry

Ingredients:

*1.5 cups of plain flour

*5.5 tbsp of icing sugar

*100g room temperature butter cut in cubes

*1 egg whisked

For the Pitaya / Dragon fruit Jelly

Ingredients :

*1 tbsp cup of @my.blue.tea Dragon fruit powder or 1/2 cup of dragon fruit

*1 tsp of icing sugar

*3/4 cup boiling water

*1 tbsp of gelatin powder

Roselle Custard Tart with Dragonfruit Jelly

Let’s Cook 👩‍🍳


  1. For the Pastry sift flour and icing sugar in a bowl. Add butter into flour mix and rub between your fingers similar to making a crumble. Add egg and bring together into a shaggy dough. Pour on table and gently knead till enough to form a ball. Cling wrap place in fridge for 30 mins

  1. For the Custard whisk egg yolks, flour, cornflour, vanilla essence and roselle powder till no lumps. Place milk and cream in saucepan on medium heat and when it simmers add a splash to the roselle mixture. Whisk vigorously, add the rest in keep whisking and place back into saucepan to cook on the stove till it thickens. Let it cool, place in piping bag to refrigerate.

  1. For the Jelly, cook dragon fruit in a saucepan on medium heat you may need a tbsp of water to help it along. Once it’s softened mash and set aside

  1. Remove pastry from fridge, roll dough out till half a cm thick, place over tart casing. Press dough in gently using rolling pin to go over it. Remove pastry edge, prick with fork, place on tray in oven for 40 mins or till brown.


  1. Add gelatin to boiling water ina bowl a whisk till dissolved. Add a splash to the dragon fruit mixture and whisk add the rest of the gelatin and whisk till smooth.


  2. Pipe custard to the tarts use the back of a wet tsp to smooth out custard and cover any gaps. Add a tbsp of dragon fruit jelly on top and smooth, leave to set for five minutes.
