How to make Thai Pandan Organic Chicken Sausage Rolls?
Pandan! Not only for sweets but its very yum in savoury dishes. Here's a dish created specially for MY BLUE TEA by Mandy Kaur of MK Culinary Creations Consultant.

Time for Pandan Sausage rolls :-
INGREDIENTS :
* 500g organic chicken mince * 1 large red chilli, deseeded and finely chopped * 1/3 cup of spring onions, finely sliced * I red onion, finely chopped * 1 Tbs of sesame oil * 1 Tbs of ginger, finely grated * 2Tbs of minced galangal and lemongrass paste * 1 Tbs of My blue tea Kaffir lime leaf powder * 2.5 Tbs of My blue tea Pandan powder * 2 Tbs of coconut cream * 2 cloves of minced garlic * 1 Tsp of ground coriander powder * 1 Tsp of ground cumin powder * 1/2 cup of coriander, finely chopped * 1 carrot, finely grated * 1 tbs of fine Himalayan salt ( adjust according to taste ) * 1 tsp of white ground pepper * 1 tsp of fish sauce * 50g of fine breadcrumbs * 1 organic egg lightly beaten
( Mix all of the above to make the filling. )
Pandan Organic Chicken Sausage Rolls
The Pastry
* 3 puff frozen butter pastry sheets, partially thawed
* 1 organic egg lightly beaten
* White sesame seed mixed with a little Pandan Powder to sprinkle on the
sausage roll prior to cooking.
METHOD:
1.) Preheat oven to 200ºC. Lightly grease and line two large flat baking trays with baking paper.
2.) Mix mince and all the above ingredients together. Beat 1 egg lightly and add to mince mixture. Store in the fridge for an 1 hour.
3.) Cut pastry sheet in half. Place one quarter of the mixture along the length of the pastry pressing together tightly. Roll the sausage roll log until the meat is completely covered with ½ of pastry. Cut roll into 2 pieces or 4 pieces according to the size you prefer to make. Place rolls, seam-side down, on prepared trays. Repeat with remaining pastry and filling.
4.) Brush with some lightly beaten egg and sprinkle with a mix of My blue tea pandan powder and white sesame seed.
5.) Cook in the oven for 20 minutes or until the pastry is golden brown and cooked through. Serve with your favourite chilli dipping sauce.
Butterfly Pea Flower Tea - a cup of cold Blue Tea is perfect with this sausage rolls.
or you have an option to use Pandan Liquid Extract - 1 teaspoon equals to 7 Pandan Leaves
