Easy and Simple Black Gojiberry & Vanilla Cupcake Recipe
Ingredients:
2 Grade B eggs
100g caster sugar
120ml fresh milk / liquid milk
100ml cooking oil
1 teaspoon vanilla essence
150g self-raising flour (sifted)
A pinch of salt (optional)
For Decoration:
100g whipping cream powder
1 cup fresh milk
1 tablespoon Black Gojiberry powder from @my.blue.tea

Black Gojiberry Vanilla Cupcakes
Method:
Prep: Preheat your oven to 160°C (320°F). Place 10-12 cupcake liners in a muffin tin.
Mix the Wet Ingredients: In a large bowl, use a whisk to mix the 2 eggs and 100g caster sugaruntil combined.
Add Liquids: Pour in the 120ml milk, 100ml oil, and 1 tsp vanilla essence. Whisk until the mixture looks smooth.
Combine with Dry Ingredients: Add the 150g sifted self-raising flour and the pinch of salt (if using) to the bowl.
Gently Fold: Use a spatula to gently fold the flour into the wet mixture. Stop as soon as you see no more dry flour. A few small lumps are okay! Do not over-mix.
Bake: Spoon the batter into the cupcake liners, filling each about 2/3 full. Bake for 18-22 minutes, or until a skewer poked into the center comes out clean.
Cool: Let them cool in the tin for 5 minutes before moving them to a wire rack.
