Acar Timun is a tangy, refreshing Malaysian-style pickled cucumber that cuts through rich dishes like satay. Crisp, colourful, and bursting with flavour, it's the perfect sidekick to any meal.
Acar Timun / Pickled Cucumber :
Ingredients :-
*3-5 pcs Long beans (cut 2-3 inch)
*3 medium Cucumber (sliced thin strips)
*100gm Young corn
*1 carrot (cut thin strips)
*3 Onions (chop)
*3 Garlic (chop)
*3 Candle nut
*5 Chilli & 3 cayenne pepper @rempah @rempah
*3 Kaffir lime leaves
*1/2 pcs Galangal leaves
*1/2 pcs Turmeric leaves
*1/2 tspn Coriander Powder @rempah
Acar Timun —the crisp, tangy pickled cucumber that completes any satay feast. This Malaysian classic is wonderfully simple: cucumber, shallots, chilli, and a sweet-sour vinegar dressing come together in minutes. But we couldn't resist giving it a little MyBlueTea love. Method:
(1) Cut all ingredients stated above + add 1 tspn sald + 2 tspn sugar + 2 tspn vinegr and soak for 30 mins
(2) Boil carrot, long beans and young corn till cook
(3) Saute the Satay sauce powder with kaffir lime leaves, galangal and turmeric till fragrant add (2) above and mix evenly
(4) Add Cucumbers and season with salt + sugar or vinegar. Serve & enjoy.
