Eggless Cupcakes recipe with Dragonfruit frosting

Make these Beautiful Cupcakes for Mum!


EGGLESS CHOCOLATE CUPCAKES with Chantilly cream frosting - sounds good!?


With Mother's Day coming up on May 14th, why not get ready to give mum a surprise with this beautiful eggless chocolate cupcake recipe? With the pretty Chantilly cream frosting, these cupcakes are going to delight anyone's heart (and stomach)! Have a go, practise a few times and when Mother's Day is here, you'll have the prettiest cupcakes ever to make mum happy! (Mum will think it's gorgeous anyway, simply because it's made by you!)


Ingredients:

  • 1-1/2 cups self-raising flour

  • 1 cup castor sugar

  • 1/2 cup unsweetened cocoa powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 cup milk mix with

  • 1 tbsp white vinegar or use buttermilk

  • 1/2 cup flavourless oil

  • 1 tsp vanilla extract

  • 2 tbsp water


Method:

(1) In a large bowl, sift together flour + cocoa powder.

(2) Add sugar, baking soda, salt + mix to combine all dry ingredients together.

(3) Add 1 cup milk to 1 tbsp white vinegar. Let it sit for 5mins.

(4) After 10 mins, add oil and vanilla extract to the milk-vinegar liquid. Stir to combine.

(5) Add the wet ingredients to the dry, mix till the ingredients are just combined.

(6) Add 2 tbsp of water if the batter is too thick.

(7) Fill the cupcake liners 1/2 full with the batter.

(8) Bake at 180degC for about 15minutes or till a skewer inserted in the center comes out clean.

(9) Remove from oven, transfer to a wire rack and let the cupcakes cool completely.


Frosting:

Frost cupcakes with whipped cream (thickened cream, vanilla paste + red dragon fruit powder @my.blue.tea )
