Maharajah Chicken for King Charles III

We found this Coronation Chicken via Twitter and requested our Brand Ambassador, Amazing Grace to help re-create it using our Spice pantry products. Tah Dah!


Coronation Chicken Afternoon Tea Sandwiches

Coronation chicken was created in 1953, when renowned florist Constance Spry and cordon bleu chef Rosemary Hume catered for a banquet to celebrate the coronation of Elizabeth II. It is believed to be inspired by the ‘Jubilee Chicken‘ created for George V’s Silver jubilee in 1935


With hints of the British Raj, the recipe is a peculiar mix of sweet and savoury. The Coronation chicken recipe was invented as a post war solution for the Queen's coronation banquet on June 2, 1953 when 350 foreign dignitaries were in attendance.


With tender chunks of chicken coated in a mildly spiced sauce with mayonnaise, it soon became one of the most popular dishes of 1950s Britain and is still served as part of a traditional afternoon tea in hotels and restaurants across Britain.

In fact, finger sandwiches filled with Coronation Chicken are a firm favourite for afternoon tea at Buckingham Palace and at Balmoral Castle, where the Queen spends her summers. Now >70 years on, Coronation Chicken is still a very popular dish, so why don’t you give it a try to celebrate King Charles III Coronation.


Recipe for the Maharajah Chicken (Serves 5)


Ingredients:

*1kg chicken thigh fillets

*1 bay leaf

*1 stalk curry leaves

*1 red onion

*2/3 cup of water Half lemon (juiced)

*1 tablespoon tomato purée

*160ml plain yoghurt 30ml cream (optional)

*3 tablespoons mayonnaise

*1 handful dried apricots (chopped)

*1 handful of sliced almonds (optional)

*Salt & sugar to taste






Method:

1. Cut chicken fillets into 2cm cubes & blanched in boiling water until cooked. Strain and leave aside.

2. In a pan, fry sliced red onion, curry leaves and bay leaf until fragrant.

3. Add meat curry based powder and water to the pan and fry the powder blend into the mixture.

4. Add lemon juice and tomato purée into the mixture. Insert salt and sugar to taste.

5. Let the mixture simmer for about 2 minutes to reduce the liquid.

6. Filter the curry mixture into a bowl and let it cook down.

7. In a separate mixing bowl, mix yoghurt, mayonnaise, cream and chopped apricots together.

8. Mix in the cooled down curry mixture into the mixing bowl and mix well.

9. Serve chicken with the sauce with Fragrant Coconut rice ie Nasi Lemak Premix or as Sandwich.

Ingredients

  • 1 tbs mayonnaise

  • 2 tbs plain yogurt

  • 1 tsp curry powder (adjust to your own taste) - but we think our Meat Curry base powder is more flavourful as it has been combined with a few spices and freeze dried powder

  • splash boiling water (if needed)

  • 250 g cold cooked chicken (leftover roast chicken is perfect. Chop into 1cm pieces)

  • 1 tbs mango chutney

  • 6 dried apricots (optional, chopped)

  • 1 tbs flaked almonds

  • Few chopped chives see my notes below

  • salt and pepper to taste
