Crispy Juicy Spice Fried Chicken is the new homemade KFC

Ayam Goreng Berempah may be quite a mouthful to say, but in Malay it simply means ‘spice fried chicken’. You may well think, can't you just get that at KFC then? As food lovers, nothing beats the magic of homemade food! Ayam Goreng Berempah is a gorgeous dish infused with a tantalising mix of herbs and spices giving it a truly robust flavour. Its texture is one that makes you reach out for another piece, and another, and another. It's crunchy, juicy and you won't be able to resist the crispy crumbs either! You'd be spooning them up and eating the heaps of crumbs like cornflakes!


This Malaysian-style fried chicken is highly explosive in taste and is different from the typical Southern versions. It is marinated overnight so the herbs and spices can really soak deep into the meat, giving it a deeper punch. When it is ready to go in the pan, you will be blown away by the fragrance once the meat is sizzling away! Your kitchen and house are guaranteed to smell absolutely divine!

Crispy and tender are two amazing textures to find in a chicken dish. What makes this Malay-style fried chicken dish so special is also its generous serving of crunchy crumbs. It totally brings out the kid in us. Don't be shy to scoop more crumbs on your plate - trust us, these humble crumbs taste heavenly with steamed white rice. The reason why these crumbs are so delicious is because they are actually the marinade which is a mix of beautiful spices such as turmeric, lemon grass, cumin etc. A neat little tip is the addition of curry leaves when frying the chicken meat. They make the dish even more fragrant!

Handy Tips for Cooking SFC


1) You can use chicken breast but the meat on this part of the chicken tends to dry very easily if it's overcooked. The dish is more likely to turn out well if you go for thighs, drumsticks and even the wings. This is because the fats on these parts help to cushion the meat and add flavour during the frying process. It keeps the meat juicy and tender.


2) If you can, leave the chicken to marinate overnight. This allows the herbs and spices ample time to really seep into the meat. If not, marinating for 30 minutes is also sufficient to create a tasty dish.

3) There is a technique called the double-frying technique (see example in the Inchi Kabin or Nyonya fried chicken recipe) which you can use. It is actually sufficient with only one cycle of frying. One thing to note before frying is to remove any marinade that may be stuck to the chicken pieces to prevent them from burning.


Cast iron pots retain heat and do a good job during the frying process. You can fry the chicken pieces at low to medium heat with the lid on. This allows the heat to cook the chicken thoroughly. When you remove the lid, slightly increase the heat to brown the chicken skin. This makes it nice and crispy.


4) If time is an issue, it is possible to freeze marinated chicken. You can then keep it for later use to speed up the cooking process.


Thaw the frozen chicken pieces in the refrigerator for at least 6 hours before frying. Another method of thawing is to put the frozen chicken pieces in a plastic bag or container and soak it in room temperature water.


Remember, it's best to use frozen marinated chicken within 6 months, otherwise the flavours are lost.


Tip:

Other Ways of Cooking Ayam Goreng Berempah SFC


a) If frying is not your favourite style, there are other ways to enjoy Ayam Goreng Berempah. You can bake the chicken pieces in a preheated oven at 200ºC for 50 minutes. This is a healthier version, and you can still enjoy the crispiness and juiciness of the chicken this way. Spread the marinade on a tray and bake it along with the chicken. It takes about 20 minutes for the crumbs to become crispy. You can remove the crumbs once they are ready, but remember to allow the chicken to continue baking until they are fully cooked.



b) If you have an air fryer, that is another option for you to make Ayam Goreng Berempah. Preheat the air fryer at 180ºC and then cook the chicken for 20 minutes. During the last 5-10 minutes, you can increase the heat to 200ºC. All that´s left to do is set the table and get ready to serve the chicken!
