    Sharing food passion My Blue Tea brews happily in a community of people passionate about food and cooking and we are always looking for like-minded people to share our love for healthy, delicious food with. Our kettle is always on the stove, ready for a boil for a welcoming pot of tea as we meet fellow chefs to share our beautiful superfoods with. Introducing Nonna Chong Recently, we have had the delight to collaborate with Nonna Chong , a true-blue foodie who lives and breathes a passion for not just healthy, homey and authentic cuisine but also in teaching others to create these very same dishes. Making her dishes from scratch is something that Nonna stands by - she is a pure, rock-solid old-school chef, having inherited her culinary skills from her father who could recreate dishes just by taste. Just as a perfumist knows every single scent that goes into a blend, Nonna's father possessed a talent for sniffing out and tasting the ingredients that have gone into each dish. His deep love for cooking did not just stop with him. Nonna has inherited his gift and she is not keeping it to herself. If anything, she is bent on sharing her knowledge, experience and joy for cooking with the world! Making dishes from scratch allows Nonna to get to know every single ingredient and spice out there, as well as their characteristics and how to give each dish its own unique, unmistakable identity. For Nonna, each dish is like an old friend. She knows the dish inside out (literally)! Nonna has lived in Australia, Vietnam, Singapore and all the way on the other side of the globe in Peru. Chefs are always hungry for new flavours and culinary experiments and Nonna has made the most of her international experience to learn to recreate different dishes with her powerful tastebuds that can recognise a variety of flavours. Being a chef is more often a passion than a job. This means their brains whiz non-stop 24/7 analysing ingredients and styles and improvisations. Nonna never stops living, breathing and dreaming about cooking whichever country she is in. A Common Tongue For Nonna, food is a wonderful unifying element. It brings people together from all cultures, backgrounds and nationalities. Food is actually quietly powerful in how it can break down differences and invisible walls and help people to simply connect from the very core of their being. We are fortunate when we can enjoy good food with and appreciate the presence of those around us, even with complete strangers. Chefs who have had the opportunity to spend time in another country can attest to this - you do not need to speak the other person's language to connect if you have a wonderful dish to share! The joy of food and cooking is so powerful it helps two people understand each other even if they do not share a common language. Basically, cooking itself has its own universal language! A chef from any country uses a knife or a saucepan just like another chef from across the globe. Whatever the nationality, when one smells good food, everyone can appreciate the joy food brings to their bodies. Watching how another chef put together raw ingredients into a piping hot dish that is drool-worthy is how one learns. Nonna has been inspired by many other budding chefs on her travels and Nonna is paying it forward by sharing with many others. Having collaborated with several other chefs, My Blue Tea is convinced chefs are one of the most generous species of humans on the planet! They are all so eager to create and share their knowledge and experience! We have yet to meet a chef who hoards their skills and dishes! Bringing Back Home Cooking Nonna was particularly spurred on to share her love for cooking when she noticed a worrying trend. Families and young people are eating out more and more. Cooking at home seems to be slowly dying out. For anyone who loves to tinkle in the kitchen and experiment with ingredients, this can feel like a looming catastrophe. And Nonna was having none of that. All chefs are excellent at improvising and problem-solving, and Nonna decided she had to do her part to keep the fiery passion for home cooking going. That is why Nonna decided to bring her cooking skills to online cooking classes so anyone from anywhere in the world can jump in and learn how to make beautiful dishes to share with families and friends. Nonna is never without a smile in the kitchen and she has been inspiring people from all over to love cooking.     The Dragon Sees Red Red is often associated with passion. For the Chinese, red is the absolute must-have colour during the Chinese New Year. So "seeing red" is actually very auspicious. So why this obsession with red? This takes us way back to the times of legends when magic and mystery prevailed … Long long ago, there was a ferocious beast called Nian that tore through villages, terrorising people, destroying homes and eating crops, livestock and even children. It was a hideous beast that had the brutish body of a bull with a huge lion's head. The villagers soon discovered that this creature was not as powerful as it appeared to be. There were three things that were kryptonite to Nian - fire, noise and the colour red. Bring in these three things and the beast would turn tail and flee, leaving the villagers alone. With the defeat of this evil creature, the colour red became a symbol of good luck and good fortune. And that has carried on through the centuries till today.     My Blue Tea Father's Day Contest Dads now are very different. I'm comparing to my Dad who was born in 1921. Dads now change nappies, take babies for walks in strollers and cook for the family. They are very involved and so dependable with everyday things around the house. No matter which generation you are from, Dads are always special. The festival is widely associated with Lakshmi, goddess of prosperity, with many other regional traditions connecting the holiday to Sita and Rama, Vishnu, Krishna, Yama, Yami, Durga, Kali, Dhanvantari, or Vishvakarman. And to celebrate this year's Diwali, we are giving you this beautiful PANDAN COCONUT CHUTNEY recipe by Vegan Chef Dave . This traditional Indian coconut chutney is given a little Pandan twist. So yummy! INGREDIENTS Water Dough 1 95 grams – All-purpose flour 30 grams – Cooking oil 15 grams – Castor sugar 1 tspn. – @my.blue.tea Roselle Powder or in this recipe we use 50 grams – Carrot Juice Water Dough 2 14 grams – All-Purpose flour 50 grams – Cooking oil 20 grams – Castor sugar 70 grams – Butterfly Pea extract water (around 30 flowers) or ½ tspn to 1 tspn – @my.blue.tea - Butterfly Pea Powder (depending on your preferred 50 Shades of Blue) Oil Dough 75 grams – Shortening 125 grams – All-Purpose flour Filling 300 grams - Lotus Paste or Red Bean Paste (divide into 20 portions) METHOD to make Water Dough 1 and 2 Rub the oil with flour until crumble. Dissolve sugar in water, add in the crumbled flour and knead until smooth Rest the dough for 15 minutes, then divide into 20 pieces. METHOD to make Oil Dough Sift flour onto the table and blend in shortening, using your palm and rub in gradually to form a soft dough, divide oil dough into portions of 120g and 80g. METHOD to make Blue Lotus Divide the 120g portion of oil dough into 20 pieces. Wrap a piece of oil dough with blue water dough to form a ball. Roll into an oblong shape. Make a Swiss roll. Turn 90°, roll out and make a Swiss roll again. Slightly flatten the pastry. Divide the 80g portion of oil dough into 20 pieces. Wrap a piece of oil dough with yellow water dough to form a ball. Roll into an oblong shape. Make a Swiss roll. Turn 90°, roll out and make a Swiss roll again. Slightly flatten the pastry. Place a piece of yellow pastry on top of a blue piece. Roll out into a flat circular shape with the middle thicker than the sides. Wrap up lotus or red bean paste fillings with pastry and shape slowly into a ball. Use a sharp knife and cut a line across the top of the pastry. Then make another four slits. Deep fry in a wok at 150°C to 180°C until the pastry opens up like petals of a lotus flower. TIPS The recommended colour to use in this pastry is blue, red and yellow.     How to make Pandan Ondeh-Ondeh Mooncake? Trending now on Facebook and IG @my.blue.tea ! Mid-Autumn Festival The Mid-Autumn Festival is also called the Moon Festival or the Mooncake Festival. It traditionally falls on the 15th day of the eighth month in the Chinese lunar calendar and this year on 1st October 2020. Mooncake A mooncake is a Chinese bakery product traditionally eaten during the Mid-Autumn Festival. The festival is about lunar appreciation and Moon watching, and mooncakes are regarded as an indispensable delicacy. Mooncakes are enjoyed amongst friends and family during gatherings while celebrating the festival. Ondeh-Ondeh Ondeh-Ondeh or Klepon/kelepon in Indonesian is a traditional Southeast Asian green-coloured balls of rice cake filled with liquid palm sugar and coated in grated coconut, originating from Indonesia. The sweet glutinous rice ball is one of the popular Indonesian kueh, and it is commonly found in Indonesia, Malaysia, Brunei and Singapore. Mooncake and Ondeh-Ondeh Fusion And when you marry the Mooncake and Ondeh-Ondeh you get this beautiful "Pandan Ondeh Ondeh Mooncake"! The Mooncake Ondeh-Ondeh Recipe Here you go : INGREDIENTS * 1 cup plain flour * 1 tablespoon @my.blue.tea Pandan Powder * 3/4 cup golden syrup * 1 tbsp lye water * 2 tbsp oil * 1 cup coconut sugar * 1 cup shredded coconut * Pinch of salt METHOD For the dough, mix the golden syrup, Pandan Powder, oil and lye water together. Then, add in sifted flour and mix well to form a dough. Cover with cling wrap and leave in the fridge overnight. The dough is easier to manage when left overnight. For the fillings, mix the coconut sugar, pinch of salt with the shredded coconut. Take the dough out of the fridge and leave at room temperature for about 1/2 hour. Divide the dough into balls, and flatten. Put the fillings in, close the dough, place into mooncakes mould. Press out onto baking tray. Bake at preheated oven 180 deg C. Brush with egg wash for the golden finish Enjoy! TIPS You may substitute golden syrup with corn syrup or honey If you don’t have lye water for making the mooncake dough, you can use baking powder which has been baked for several hours.
