We read the news that demand for Vegan food products soar under COVID lockdown. The ongoing trend reflects people paying closer attention to their diet during lockdown, increasingly adopting “flexitarian” diets – cutting down on meat and dairy while eating more plant-based foods.

Here's our recipe for Blueberry Roselle Bounty - no cooking required

Blueberry Pandan & Roselle Bounty - Ingredients
* 3 Tbs coconut milk
* 2 Tbs maple syrup
* 3 Tbs coconut oil
* 2 tsp @my.blue.tea Roselle powder
* 2 tsp @my.blue.tea Pandan powder
* 1/2 cup blueberries
* 1 1/2 cup shredded coconut
Method
(1) Process all ingredients until combined and sticking together - alternately.
(2) Press into mold or form shape.
(3) Freeze until firm and coat or drizzle with chocolate!
Chocolate dip
* 1/2 cup cacao powder
* 1/2 cup coconut oil
* 1/4 cup maple syrup
* Whisk all ingredients together until smooth.
